VINIFICATION: The harvest begins with a close inspection and selection process of the grapes, which are then harvested by hand. The vinification process starts by gently de-stemming the grapes and then using the most modern technologies, making a cryomaceration pre-fermentation in a protective atmosphere. It is then separated from the marc by pressing, followed by cleaning of the must fermentation with controlled temperature conduction.
