VINIFICATION: The harvest begins with a close inspection and selection process of the grapes, which are then harvested by hand. The vinification process starts by gently de-stemming the grapes and then using the most modern technologies, making a cryomaceration* pre-fermentation in a protective atmosphere. It is then separated from the marc by pressing, followed by cleaning of the must fermentation with controlled temperature conduction.
*(In utilizing the cryomacerating process by the winemaker, it enhances the varietal character of white wines. This procedure provides, acceptable, well-balanced, better-rounded wines, with a stronger body in the mouth.) (Peinado et al. 2004).

CHARACTERISTICS: It’s a soft pale yellow wine, with a delicate bouquet of exotic fruit and a floral accent. The fruity and lingering savory taste makes this an elegant and fine wine. Kometes perfectly accompanies any refined dishes.
